Culinary and hospitality students to serve Hawaiian fare

EUGENE - The culinary arts and hospitality management students at Lane Community College present their spring Classical Cuisine Dinner on Thursday, May 25, at 6 p.m. at the Center for Meeting and Learning. The students selected the eight islands of Hawaii as inspiration for the event.

The evening begins with passed hors d'oeuvres of sesame crusted tuna, Kona crab and lobster cakes, tropical salsa and Hawaiian spare ribs. Upon entering the dining room guests will be greeted by a grand buffet of corn chowder soup, grilled fruit salad with a green pepper vinaigrette, time-honored Kalua pig, sweet and sour tofu, orange ginger chicken, lomi lomi salmon, and much more. Coconut Bread with sweet pineapple butter will compliment the offerings. Desserts include white chocolate guava cake with roasted banana cream sauce, minted mango martini float with crystallized ginger, chocolate macadamia nut pie, and Kona coffee.

The Dragon Fire Dancers will perform fire dancing and fire juggling prior to the doors opening for dinner. During dinner, Hula dancers that will perform authentic Samoan dances from the Hawaiian tropics.

After two years in the culinary program, dining room manager Paul Ely is excited about the event. "The quality of the food and menu items are different from anything we've presented in the past. The Kalua pig (whole pig cooked traditionally underground) has been tested and will be an exquisite addition to the assorted menu entrees. Expect a fantastic culinary experience!"

The Center for Meeting and Learning is located in Building on Lane Community College main campus in Eugene, 4000 E. 30th Avenue. Tickets are $35 each and can be ordered from our website, 2011sitearchive.lanecc.edu/culinary or from the hospitality office at 463-3503; leave a message and your call will be returned. Seating is limited.
