Winter dinner features South American carnival theme
EUGENE - SudoAmericano Carnival de Sabor (South American Carnival of Flavors) is the theme of the winter term classical cuisine dinner at Lane Community College February 26. The dinners are planned, prepared and hosted by culinary arts and hospitality management students.
The flavors of South American carnival inspired the menu. Selected courses
include a mussel soup from Argentina, braised lamb in cilantro sauce from
Peru, quinoa salad with black beans and corn from Argentina, and crisp
stir-fried kale from Brazil. Vegetarian and special dietary requests can
be accommodated.
Horlando Terrones, a native or Peru, will serve as sous chef. He came
to the United States to study economics but soon found cooking more appealing
and changed his major to culinary arts. "I'm excited about the South
American menu. You don't see this type of food in Eugene. It helps people
to learn about other cultures through their food," says Terrones.
Entertainment will include Spectrum, Lane’s vocal jazz ensemble,
and the Salserus Dance Group of Eugene who will demonstrate the popular
South American dance, the Salsa. A no-host wine and beer bar will feature
the wines of South America.
The event will begin at 6 p.m. in the Center for Meeting and Learning,
Building 19, main campus. Tickets are $35 each and can be ordered from
the Culinary and Hospitality office at 463-3503 between 10 a.m. and 4
p.m. Mondays through Fridays. Seating is limited.
